Rolled Stuffed Flank Steak

2 lbs. flank steak
1 c. chopped celery
1 c. shredded carrots
1 onion, finely chopped
1 tbsp. chopped parsley
1/4 tsp. pepper
1 egg
1 c. bread crumbs
1/2 tsp. sage
2 tsp. salt
2 tbsp. butter
1 c. water
1 bouillon cube

Combine vegetables, parsley, egg, bread crumbs and seasonings.  Spread over steak. Roll steak and fasten with a skewer or string.  Brown well in butter.  Add water and bouillon cube.  Cover and simmer 2 hrs.  May be coooked in medium oven.  Thicken liquid for gravy. 


Norwegian Date Pudding

1 c. chopped English walnuts
1 c. sugar
2 Tbs. baking powder
1 c. chopped dates
2 eggs, separated
2 c. milk
1 tsp. vanilla

Mix dates and nuts with flour.  Beat yolks with vanilla.  Add stiffly beaten egg whites.  Pour in to a greased 8" dish or pan (1 qt.).  Bake at 325 degrees for 1 hour.  Serve with whipped cream or hard sauce.  Serves 6-8.
Scandanavian Almond Bars

1/2 tsp. almond extract
1/2 c. coarsely chopped sliced almonds

1 3/4 c. All Purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 egg

Stir flour, baking powder and salt together.  In a large mixing bowl, beat together butter until soft.  Add sugar and beat until fluffy.  Add egg and almond extract and beat well. Add flour mixture and beat until well mixed.  Divide dough into 4ths.  Form each into a 12" roll and place 4-5 " apart on an ungreased baking sheet.  Flatten until 3" wide. Repeat with remaining rolls.
Pepparkakar Spritz

2 c. All Purpose flour
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
1/2 c. sugar
1 unbeaten egg yolk
1/3 c. molasses

Cream butter and gradually add sugar.  Beat well.  Blend dry ingredients together.  Mix with butter and sugar.  Mix thoroughly.  Press a small amount of dough through a cookie press and onto an ungreased baking sheet.  Bake at 400 degrees for 6 - 8 min.  May frost or decorate cookies after baking. 
Spicy Watermelon Salad
Work time: 20 min.  Total prep time: 20 min.

2 lbs. watermelon seeded and cut into bite size chunks
1/2 tsp. ground cumin
1/4 tsp. chili powder
1/3 tsp. cayenne pepper or to taste
1/2 tsp. sea salt
1 tbl. fresh lime juice
Fresh basil, taragon or coriander leaves if desired

Mix dry spices together evenly.  If desired, put spice mixture into a shaker for easier use.  Shred leaves (if using) chiffonade style (thin strips).  Immediately before serving, toss the watermelon chunks, lime juice and leaves, srinkling the fruit evenly with spice mixture.  Mix in uniformly but do not overwork the fruit.  Garnish with additional leaves if desired.  Serves 4 -6.
